Adobo Beef Tacos

- Pickled Onions:
- 1 cup red onions, thinly sliced
- 1/3 cup white vinegar
- 1 tsp salt
- 2 tbsp honey
- Beef Rub:
- 1 tbsp smoked paprika
- 2 tsp adobo seasoning
- 1 tsp ground chipotle chile pepper
- 1 lb flat iron steaks
- 8 small tortillas
- 1 cup queso fresco, crumbled
- Fresh cilantro, chopped
- Combine red onion, vinegar, salt, and honey in a bowl. Stir well, cover, and refrigerate.
- Combine paprika, adobo, and chipotle pepper in a small bowl. Press evenly onto the beef. Cover and place in fridge for 15 minutes - 2 hours
- put steaks on grill over medium heat. Grill, covered, 10 - 14 minutes, turning once. Let rest for 5 minutes.
- cut steak thinly against grain. Drain pickled onions. Top tortillas with steak, onions, queso fresco, and cilantro.
