Cauliflower and Sausage Casserole

Ingredients
1 large cauliflower head, broken into florets
1 medium onion, coarsely chopped
12 to 20 oz sausage, sliced into 1/2 inch rounds (We normally use kielbasa)
1 to 1.5 cups shredded sharp cheddar
2 tsp cajun seasoning
1/4 tsp ground black pepper
1/8 tsp salt, if the Cajun blend is salt-free
2 tbsp olive oil, divided
(Optional) 1 tbsp fresh chopped parsley
Directions
Heat oven to 425°F. Spray a 2-quart baking dish with nonstick cooking spray.
Lightly steam the cauliflower florets to prevent the stems from being too crunchy. Set aside and let cool.
Heat 1 tbsp oil in skillet over medium heat. Add sausage and onion. Cook, stirring constantly, until browned, 5-10 minutes.
In a large bowl, toss the cauliflower with the cajun blend, salt, pepper, and parsley.
Add the sausage and onions to the cauliflower. Drizzle remaining 1 tbsp oil into the bowl. Toss to blend.
Spread the mixture into the baking dish. Bake for 25-30 minutes, until cauliflower is browned. Stir a couple of times.
Sprinkle cheese over the top, and bake for an additional 3-5 minutes.
