Ingredients
4 cups cauliflower florets
1 large egg, lightly beaten
1 cup shredded cheddar
1 cup grated parmesean
2/3 cup panko breadcrumbs
2 tbsp chopped chives
Dipping Sauce:
1/2 cup ketchup
2 tbsp sriracha sauce
Directions
Steam the cauliflower, either on the stovetop or using the instant pot's pressure cooker setting
In a food processor, rice the cauliflower. Put riced cauliflower on a clean kitchen towel and squeeze to drain water. It doesn't need to be completely drained.
Mix cauliflower, egg, cheeses, breadcrumbs and chives in a large bowl until combined. Salt and Pepper to taste.
Roll 1 tbsp of the cauliflower mixture into tater tot shape using your hands. Arrange in single layer in air fryer basket so that they aren't touching each other. You will need at least two batches.
Cook in air fryer at 375 degrees for 10 minutes, until tots are golden. While the first batch is cooking, heat the oven to 200 degrees.
When the first batch is done, remove from air fryer basket and put on baking sheet. Put sheet in warmed oven.
Mix the ketchup and sriracha together. Use as dipping sauce for the tots.
