Deviled Egg Potato Salad
Potato salad with all the fixings of deviled eggs.
Ingredients
3.5 lbs Yukon Gold potatoes, peeded and cut into 1-inch pieces
1 cup mayo
3 tbsp yellow mustad
2 tsp white vinegar
1 tsp salt
6 hard boiled eggs, peeled and chopped
3 celery ribs, thinly sliced
6 scallions
1/3 cup chopped parsley
4oz jar diced pimentos
sweet paprika for garnish
Directions
Place potatoes in medium saucepan.
Cover with cold salted water.
Simmer until tender, 4-5 minutes. Drain.
Combine mayo, mustard, vinegar, and salt in a large bowl.
Add potatoes, eggs, celery, scallions, parsley, and pimentos. Toss to combine.
Season with salt, pepper, and additional white vinegar to taste.
Garnish generously with paprika.
