Ingredients
4 bone-in chicken thighs, skin on
2 tbsp butter
6 cloves garlic, minced
1 large onion, sliced
1 cup bourbon
2.5 cups chicken stock
1 cup frozen peas
2 tbsp chopped parsley
Directions
Dry chicken thighs with paper towels and season with salt and pepper.
Melt 1 tablespoon butter and 1 tablespoon olive oil in a large cast iron pan over medium-high heat.
Sear chicken, skin side down, until brown. About 7-12 minutes.
Flip for 4 minutes and transfer to a plate.
Add 1 tablespoon butter. Saute garlic and onions until softened. About 5 minutes.
Add bourbon and chicken stock. Simmer for 5 minutes.
Season with 1 tsp salt and 1/2 tsp pepper.
Put chicken back in pan, skin side up. Simmer until chicken is cooked through and sauce is thickened. 30-40 minutes.
Add peas. Cook until warmed through.
Garnish with parsley and serve immediately.
