Grandma's Cheese Torte

Light and airy cheesecake

|
- Crust:
- 2 cups crushed graham crackers
- 1/3 cup sugar
- 1/3 cup butter, melted
- 1 tsp cinnamon
- Filling:
- 4 eggs, separated
- 2 tbsp knox gelatin (2 packets)
- 1/4 cup cold water
- 1/2 cup milk
- 1 cup sugar
- 1/2 tsp salt
- 2 cups heavy cream
- 16 oz cream cheese, room temperature
- 1/2 tsp vanilla
- Crust:
- Heat oven to 350 F
- Mix crust ingredients together and press into a springform pan.
- Bake for 8 min, cool before filling.
- Filling:
- Combine gelatin and cold water, set aside.
- Mix egg yolks, milk, sugar, and salt together. Cook over low/med heat until somewhat thick.
- Add gelatin mixture, stir until dissolved & let cool.
- Whip the heavy cream
- Cream the cream cheese and vanilla together.
- Add the thickened egg mixture & whipped cream to the cream cheese mixture. Beat until thick & fluffy.
- Beat the egg whites until stiff & dry. Fold into cheese mixture.
- Pour into cooled crust. Chill overnight.
