2 lbs assorted vegetables, cut into 2-inch pieces. I usually use:
1/2 lb mushrooms
2 medium carrots
1 red pepper
1 yellow squash
Any other roastable veg in the house
5 tbsp olive oil
2 tbsp lemon juice
1 tsp salt
1/4 tsp pepper
1 1/2 tsp dried Italian seasoning
2 cloves garlic, minced
Directions
Put everything except the vegetables in a large bowl. Whisk to combine.
Add vegetables to bowl, toss to coat. Cover and refrigerate 30 minute to two hours.
Heat grill to medium high heat. Grease a vegetable grilling rack, and place marinated vegetables on it.
Grill vegetables, stirring frequently until browned and tender, about 30 minutes.
OPTIONAL - you can start these on the grill to get a char, then finish in the oven. To do this, set the oven to 400. Grill vegetables for about 10 minutes, and move vegetables to a baking dish. Roast for an additional 30 minutes or until done.
