Ingredients
1.5 lbs green beans, trimmed
1 small sweet or red onion, thinly sliced
Marinade:
1/4 cup balsamic vinegar
1/2 cup white vinegar
2 tablespoons sugar
2 tablespoons extra virgin olive oil
1 garlic clove, minced
1/2-3/4 teaspoon salt (to taste)
1/2 teaspoon pepper
Directions
Cook green beans in boiling water until tender, but still crisp. 4-5 minutes.
Drain, immerse in ice water until cool. Drain.
Whisk marinade ingredients together in a serving bowl.
Add onion and green beans. Stir together.
Cover and marinate in refrigerator for 5-24 hours. Stir / shake occasionally.
