Coat a large saute pan with the olive oil, and set to medium-high heat. Add onions, and season with a few grinds of salt. Cook for 5-7 minutes until soft and aromatic, but colorless.
Add the garlic and crushed red pepper, and saute for anothe 2 minutes. Set aside to cool
In a large bowl combine the meat, eggs, parm, parsley, and bread crumbs. Combine with hands. Add the onion mixture and the 1.75 tsp of salt, then squish to combine. Add water, squish again.
Test the seasoning of the meatballs by making a tiny hamburger and sauteing it. When in doubt, add more salt.
Heat oven to 350
Form meatballs. Re-coat saute pan with oil, and set to medium-high heat. Brown meatballs on all sides, and place on a baking sheet when done.
Bake browned meatballs in the oven for at least 15 minutes.
