Ingredients
1 tbsp olive oil
24 oz frozen corn
1/4 cup mayo
8 oz feta, crumbled
2 tbsp lime juice
1/2 jalapeno, diced
3 tbsp diced red onions
1/2 cup cilantro
1/4 tsp chili powder
3 cloves garlic
pinch red pepper flakes
1/2 tsp salt
Directions
heat oil in large skillet over medium heat. Add corn and cook for 8 minutes, stirring frequently
In a large bowl, combine the mayo, feta, and lime juice
stir jalapeno, red onion, cilantro, chili poweder, garlic and red pepper flakes into the corn
Add corn into the cheese mixture and stir until well coated
