Ingredients
1 large onion
2 cups buttermilk
2 cups flour
1 Tbsp salt
freshly-ground black pepper, to taste
1/4 tsp (to 1/2 tsp) cayenne pepper
1-2 quarts oil, for frying
Directions
Slice onion very thin.
Place in baking dish, cover with buttermilk.
Let soak for at least an hour
In a medium bowl, mix together flour, salt, black pepper, and cayenne pepper. Set aside until onions are ready.
Heat oil to 375°F in a heavy pot.
Line two plates with several paper towels.
Grab a handful of onions, toss them in the flour mixture, tap to shake off excess, and drop into hot oil.
Break them up so you don't end up with a fried mess.
Fry for a few minutes and remove as soon as golden brown.
Place fried onions onto one of the plates lined with paper towels.
Be sure not to pile the onions too high on the plate, or the oil from the top ones will just soak into the onions below them.
