These Spicy Peanut Noodles are extremely simple to make! A fusion of flavors in a dish that can be prepared in under 20 minutes

Ingredients
12 oz asian noodles (such as udon, soba, or rice noodles)
2 tbsp toasted sesame oil
5 cloves garlic, minced
1 tbsp fresh ginger, minced
Sauce:
1/2 cup low sodium soy sauce
1 tbsp honey
2 tbsp rice vinegar
2 tbsp gochujang
1/2 cup smooth peanut butter
3/4 cup water
1 tbsp corn starch
Garnish:
fresh basil
limes, cut in wedges
Directions
Cook noodles according to package instructions
In a small bowl, whisk together the sauce ingredients
Heat the sesame oil in a large skillet or wok, then add the ginger and garlic. Saute until aromatic. Careful! The sesame oil makes it look done early
Puree the garlic and ginger in a food processor. Then add to the sauce.
Make a slurry of 1 tbsp corn starch and 1 tbsp water. Add to sauce, and whisk.
Add noodles and sauce, then remove from heat and toss well to make sure everything is coated nicely
Garnish with basil and serve with lime wedges and crushed peanuts, if desired
