Peanut Noodles with Chicken

These Spicy Peanut Noodles are extremely simple to make! A fusion of flavors in a dish that can be prepared in under 20 minutes

Ingredients
12 oz asian noodles (such as udon, soba, or rice noodles)
2 tbsp toasted sesame oil
3/4 lb boneless skinless chicken breast, cut into small thin strips
5 cloves garlic, minced
1 tbsp fresh ginger, minced
1 medium red bell pepper, sliced
Sauce:
1/2 cup low sodium soy sauce
1 tbsp honey
2 tbsp rice vinegar
2 tbsp gochujang
1/2 cup smooth peanut butter
3/4 cup water
Garnish:
fresh basil
limes, cut in wedges
Directions
Cook noodles according to package instructions
In a small bowl, whisk together the sauce ingredients
Heat the sesame oil in a large skillet or wok and then add the chicken. Cook until no longer pink
Add ginger and garlic and saute with chicken until aromatic. About 1 minute
Add the red pepper and saute for another minute.
Add noodles and sauce, then remove from heat and toss well to make sure everything is coated nicely
Garnish with basil and serve with lime wedges and crushed peanuts, if desired
