Potato Kielbasa Skillet

Ingredients
5 strips bacon, cooked and crumbled
1 lb red potatoes (3-4 medium), cut into 1-inch pieces
3 tbsp water
1/2 cup chopped onion
3/4 pound smoked kielbasa, cut into 1/4-inch slices
1 tbsp olive oil
Brown Sugar Mixture:
2 tbsp brown sugar
2 tbsp cider vinegar
1 tbsp Dijon mustard
1.5 tsp minced fresh thyme or 1/2 tsp dried thyme
1/4 tsp pepper
4 cups fresh baby spinach
Directions
Boil the Potatoes until tender
Meanwhile, in a large skillet or pot, heat oil over medium-high heat.
Satue onion and kielbasa until onion is tender.
Meanwhile, mix together all ingredients in brown sugar mixture. Set aside.
When onion is tender, add potatoes to skillet. Cook and stir until lightly browned. 3-5 minutes.
Stir in brown sugar mixture and bring to a boil. Reduce heat and simmer, uncovered, for 2 minutes, stirring occasionally.
Stir in spinach. Remove from heat once spinach wilts.
Stir in bacon and serve immediately.
