Ingredients
1/2 medium head of red cabbage
1 large carrot, peeled
1 shallot, thinly sliced
1 jalapeno, seeded and diced
1 clove garlic, minced
1/4 cup lime juice
3 tbsp olive oil
1 tbsp honey
2 tsp kosher salt
Directions
Using the slicing blade on a food processor, thinly slice the cabbage. You will need to cut the cabbage into smaller wedges to fit in the processor.
Using the shredding blade on the food processor, shred the carrot.
In a large bowl, whisk together the lime juice, oil, honey, salt, and garlic.
Add the cabbage, carrot, shallot, and jalapeno. Toss well to coat.
