Roasted Vegetables with Tzatziki Sauce

Ingredients
3 cups cauliflower florets
1 red pepper, cut into 1" chunks
1 yellow pepper, cut into 1" chunks
1 zucchini, cut into 1/2" slices
2 carrots, cut into 1" slices
14oz can chickpeas, drained and rinsed
1 1/2 tsp ground cumin
1 tsp smoked paprika
1 tsp garlic powder
1 tsp salt
1/2 tsp ground coriander
1/2 tsp ground cinnamon
2 tbsp olive oil
Tzatziki sauce:
3/4 cup plain greek yogurt
1/2 cup grated cucumber
2 tbsp lemon juice
1 1/2 tsp dried dill
1 garlic clove, minced
Directions
heat oven to 400
combine all vegetables in a large bowl, mix well.
combine all seasonings in a small bowl, mix well.
add the spices to the veggies with the olive oil. Mix well.
spread the veggies on baking sheet. Bake for 20 minutes. Toss veggies, then bake for another 10 minutes.
In a small bowl, combine all the sauce ingredients until well mixed.
