Shredded Beef for Tacos or Burritos

For when you accidentally make a gallon of mexican rice and need to get rid of it.

Ingredients
3 lbs beef roast, trimmed. (Chuck roast, sirloin, brisket)
1 large onion, diced
1 cup beef broth
4 oz tomato sauce:
If making with Mexican rice, add some garlic, basil, and oregano to the leftover tomato mixture, to taste, and blend until smooth.
1/4 cup lime juice
2 garlic cloves, minced
1 tsp cumin
1 tbsp chili powder
1.5 tsp salt
1 tsp cilantro
1-2 jalapeno peppers, seeded and chopped.
Directions
Put onion into slow cooker, and put beef on top of it
in a bowl, whisk together the remaining ingredients, and pour over the roast
cook on low for 8 hours
remove from cooker, reserving juices
use 2 forks to shred the beef, and mix in juice for desired consistency.
Put into some sort of Mexican food. Serve with some sort of Mexican sides or fixins. We serve this with Mexican rice and black beans
