That Good Potato Salad
- 2.5 lbs red potatoes
- 1/2 bunch green onions, sliced
- 4 slices bacon
- 1/2 cup buttermilk or plain yogurt
- 1/2 cup sour cream
- 1/2 cup mayo
- 3/4 oz Hidden Valley Ranch dressing mix
- Cook the bacon:
- Heat oven to 400 degrees.
- Line a rimmed baking sheet with foil for easy cleanup.
- Lay bacon out flat on prepared baking sheet.
- Bake for 10-15 minutes, until bacon is well done and will crumble easily.
- Crumble the bacon once it has cooled.
- Boil, skin, and slice the potatoes.
- Combine buttermilk/yogurt, sour cream, mayo, and ranch dressing mix in a large mixing bowl.
- Stir until well combined.
- Add the potatoes, crumbled bacon, and about half the green onions.
- Mix until the dressing nicely coats the potatoes.
- Top with remaining green onions.
- Refrigerate and serve cold.
