Waffle recipe from the Joy of Cooking

- Dry Ingredients:
- 167g cake flour
- 6.5 ml double-acting baking powder
- 1.6 ml salt
- 2 tsp sugar
- 2 eggs, separated
- 4 tbsp melted butter or vegetable oil
- 1 cup milk
- Add the Dry Ingredients to a flat-bottomed mixing bowl.
- Beat the egg yolks, then mix in the butter (or oil, if using) and milk.
- Whip the egg whites until stiff, but not dry.
- Make a hole in the center of the dry ingredients. Pour in the egg/butter/milk mixture.
- Combine with a few swift strokes. The batter should have a pebbled look, similar to a muffin batter.
- You may want to include one of the following, for variety:
- 1/2 cup fresh fruit or berries
- 1/4 cup raisins or pureed dried fruit
- 1/4 cup finely chopped nuts or coconut
- 1/4 cup grated semisweet chocolate
- 1/2 cup shedded sharp cheese
- 1 cup finely diced cooked ham
- Fold in the egg whites until they are barely blended.
- Cook on a waffle iron.
