White Beans with Bacon and Herbs

Ingredients
8 strips bacon, chopped
4 cloves garlic, minced
1.5 tbsp fresh basil, chopped
1.5 tbsp fresh rosemary, chopped
3 tbsp fresh parsley, chopped, divided
1/2 tsp red pepper flakes
2 tbsp red wine vinegar
2.5 cups chicken broth, divided
31oz white cannellini beans, drained and rinsed
1/2 tsp salt
1/2 tsp black pepper
Directions
Cook bacon in a heavy bottomed sauce pan on high until bacon is crispy.
Stir in the garlic, basil, rosemary, red pepper flakes, and 2 tbsp of the fresh parsley. Cook for 30 seconds until garlic is aromatic.
Add red wine vinegar and 1/2 cup of the chicken broth. Stir to deglaze the pan.
Add the beans, remaining chicken broth, salt, and pepper. If the broth doesn't cover the beans, add more.
Bring to boil, reduce to simmer. Cook for 15-20 minutes until the liquid is mostly cooked off.
Garnish with remaining parsley.
